An Unexpected Crowd Favorite

Each year, I host Christmas breakfast. It started out of necessity because Jackson was the only grandchild and we chose not to have him leave his toys on Christmas Day. But, it has evolved into a special morning with my husband’s side of our family. Breakfast is looked forward to for weeks prior to the big day! The menu is similar each year with a few new twists. This year one of those twists was pineapple casserole! It was the unexpected crowd pleaser! Pineapple Casserole Recipe:


  • 2 (20 oz.) cans chunk pineapple in juice (no sugar added), well drained-save the juice for your Mimosas!

  • 3/4 c. granulated sugar

  • 6 T. self-rising flour

  • 2 c. grated sharp cheddar cheese

  • 2 c. crumbled Ritz crackers (1 sleeve)

  • 1 stick butter, melted


1. Mix together drained pineapple, sugar, flour, and cheese. Pour into an 8x8" baking dish lightly sprayed with non-stick cooking spray.


2. Combine Ritz cracker crumbs and melted butter, tossing with a fork to moisten all the crumbs. Top the pineapple mixture evenly with the cracker crumb mixture.


3. Bake at 350 degrees for 25-30 minutes until heated through.
