Chicken or Turkey Fajita Soup

Shredded chicken or turkey-I used leftover turkey from Christmas about a pound or so

Chicken broth-2 -32 ounce containers-you may add more as needed

3 cans of diced tomatoes

2 cans of black beans drained

2 cans of yellow whole kernel corn

2 packets of taco seasoning

1 jar of mild salsa

Salt and pepper to taste

1 yellow, orange, green, or red bell pepper diced

Onion powder to taste (dash)

Garlic powder to taste (dash)

1 brick of cream cheese


Add all ingredients except cream cheese to a stock pot. Bring to a boil. Reduce heat and simmer for several hours. You'll taste and add water as needed to create more broth. Add the cream cheese and allow it to mix in with the rest of the soup.


Serve with taco cheese, tortilla chips, and sliced avocado.
