Chocolate Chip Cookies

1 cup plant based butter, cold
1 cup Brown Sugar
3/4 cup Sugar
2 large Eggs
2 teaspoons Vanilla
2 3/4 cups All-Purpose Flour
1 teaspoon Cornstarch
3/4 teaspoon Baking Soda
1 teaspoon Salt
2 1/2 cups Chocolate Chips (semi-sweet or mix of milk chocolate and semi-sweet)
Mix all ingredients together except chocolate chips until well blended. Then fold in chocolate chips. Refrigerate batter for at least 2 hours (preferably 24 hours) before scooping by the rounded tablespoon on a prepared baking sheet. Bake at 375-400 for 8-12 minutes or until brown on the bottom.
