Ginger Dressing

So, there’s an easy way and a hard way to do things. I prefer the easy way! This recipe for ginger dressing is just that...easy and simple with ingredients that most folks have on hand.
1/2 Cup of soy sauce
14 ounces carrots (I had baby carrots)
8 ounces white or yellow onion
4 TBSP ground ginger (I had some dried and grated that and then added some McCormick)
1 tsp. Salt
1/2 tsp. white pepper
1 Cup of apple cider vinegar
2 tsp. Sugar
1 & 1/2 Cups of canola oil
I used my Ninja food processor and processed on low all of the ingredients except the oil. Once well blended, use the oil spout and slowly add the oil until it is incorporated. Because I want this dressing to be fully emulsified, I transferred the mixture to a mixing bowl and emulsified it with my Kitchen-aid hand blender. This will give the dressing a smooth texture.
Separation of ingredients is normal with this dressing. Just shake well before drowning that salad and enjoy.
