Minestrone Soup

1 can of red kidney beans drained

1 can of white cannellini beans drained

2 cans of diced tomatoes

1 can of tomato sauce (14 ounce)

1 diced yellow onion

1 diced zucchini

1 diced yellow squash

3 carrots peeled and diced

3 stalks of celery diced

1 can of green beans drained

1 can of English peas drained

1 32 ounce container of vegetable broth

Cooked and drained Ditalini pasta

Add 32-40 ounces of water

1 tbsp of minced garlic

1 tbsp of better than bouillon vegetable base

Salt and pepper to taste


Cook all items together except pasta. Allow vegetables to become tender. Then add pasta and simmer for about 30 minutes.
