Oatmeal Raisin Cookies

  • 1 cup plant based butter, cold

  • 1 ½ cups light brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tablespoon pure vanilla extract

  • 2 cups all-purpose flour

  • 1 ½ cups rolled oats

  • 1 1/2 tablespoons cinnamon

  • 1 teaspoon salt

  • ½ teaspoon baking soda

  • 2 cups (about 1 - 12 ounce box) Raisins


Mix all ingredients together except raisins. Once mixed, fold in raisins.


Refrigerate batter for at least two hours before dropping by a rounded tablespoon or cookie scoop onto a prepared baking sheet at 350 degrees for 12-15 minutes. Allow cookies to cool slightly before removing from the pan.


I prefer silicone baking mats.
